Carrot, Cheese and Chive Toastie

Ingredients:

  • 2 pieces of bread
  • ¼ cup grated mozzarella
  • ¼ cup grated tasty cheese
  • ¼ cup Just Veg Carrot Shred
  • 1 tbs chives chopped
  • 1-2 tbs mayonnaise
  • Salt and pepper to taste

Directions:

  1. Spread one piece of bread with mayonnaise.
  2. Place both cheese and carrot onto one piece of bread.
  3. Add Just Veg. Carrot Shred evenly.
  4. Sprinkle chives over and season with salt and pepper to taste.
  5. Sandwich the second piece of bread on top.
  6. Spray top of bread with olive oil, or spread with butter.
  7. Place into a non-stick griddle pan for 3-4 minutes, then flip and cook for 3-4 minutes further, until golden
  8. Cut and enjoy!
