African Coffee is Best
I've been home roasting coffee for many years and over time I have realized that overall, the African coffees are better than any other region, at least to my taste. I used to get a lot of Central American beans but I've been put off by the recurring grassy sour notes that I often get from the Panama, Guatemalan, Honduran, Costa Rican coffees. I need to roast most of these Central American coffees a shade darker to overcome that tendency, and sometimes even more roasting doesn't get rid of thos...

Ricoh MP C5503 printer Slow Printing Fix
For a long time we had been having slow printing issues with printing PDF documents on our Ricoh MP 5503 printer. We had a Ricoh service person come to our office to service the machine and I asked him about the slow printing issue. Right away he said I know what is wrong and how to fix it. He told me to open my Windows printer driver for the Ricoh 5503, and on the tab at the top labeled "Ports", click on "Add Port", and create a new port using port type "Standard TCP/IP Port", and name the po...

Masons Pants and Shorts
I have a few pairs of Ems by Masons pants and shorts. I've had them for at least ten years, and I wear them pretty often. They are all still in excellent condition and don't really show any significant signs of wear. Of course they are a "rough-out" style of pant made from very durable materials so it's not that surprising that they are holding up. But the sewing is also excellent. Each pair is made in Italy, seemingly by hand or close to by hand. I've never had a seam rip, and no holes have ...

Malt Beverage Evaluation/Ratings
This entry is to review some non-alcoholic beverages I purchased in May, 2022. Ceria Grainwave: From Sleeping Giant Brewing, Denver CO. 12 oz can. Price $2.29. Purchased from Total Wine May 14, 2022. Great packaging: blue can with yellow lettering and a classical drawing. Non-alcoholic. Billed as a Belgian style beverage with orange peel and coriander. Tasting notes: Hazy gold color; lightish body; medium-low carbonation with good mouthfeel. Flavor is a bit on the sour side, but not excessi...

Ricoh Scan To Email Fix
I was having a hard time setting up the Scan to Email feature of our Ricoh MP C5503 copier/scannner/printer. Several hours later I realized that on the user configuration panel, turn off the "Send via SMTP Server" setting. Presumably you have already set up the outbound SMTP email function in the General Settings section. Just use those settings and make sure you uncheck (disable) the "Send Via SMTP Server" setting in each user's email panel. Hopefully this will save someone a few hours trying ...

Salt rising bread recipe from Scientific American 1917
This recipe was published in the Scientific American of October 6, 1917, page 213, along with an article written by H.A. Kohman, Senior Fellow of Bread Research at the University of Pittsburgh: Take one cup full of sweet milk in a quart cup. Place on stove until milk boils well. Stare into the boiling milk five or six teaspoonfuls of white cornmeal, to which a pinch of soda has been added. Wrap up well and set in a warm place overnight or until it is light. For the sponge: Pour 1 and 1/4 cup f...
