Warm Cucumber Salad


  • 1 small onion or equivalent (daikon, radish, or shallots), thin sliced
  • 2 medium Lebanese cucumber or 1 large European cucumber, peeled and thin sliced using mandolin slicer, level 2
  • Apple Cider Vinegar or rice wine
  • 2 Tbsp of Sesame Oil
  • 1 tspn of dried Sumac
  • 1 Tbsp of Capers


  1. Put oil in the pan and saute onion until soft
  2. Add cucumbers and capers and stir fry until soft, add a dash of the rice wine or ACV

Serve warm or allow to cool and serve.
