Fried Halloumi with Grilled Lettuce Hearts

Ingredients

200g Halloumi, sliced into 1cm pieces
1 cos lettuce heart, halved length ways
Olive oil to fry and drizzle
Walnut oil to drizzle
Squeeze of lemon
Sprinkle of sesame seeds

Method

  1. In small fry pan, cover bottom with olive oil and heat to medium heat. At the same time, spray olive oil on grilled pan and heat to medium heat.
  2. Put halloumi pieces in hot oil and leave for 3 mins. Place lettuce hearts cut side down on grill pan.
  3. After 3 mins, flip halloumi pieces and grill for another two mins. Watch lettuce hearts until they start to collapse and remove from grill, placing them cut side up on plate.
  4. Remove halloumi from fry pan and place on plate next to lettuce hearts
  5. Drizzle lettuce hearts with walnut oil. Halloumi with olive oil.
  6. Sprinkle salt on lettuce hearts, squeeze lemon juice on lettuce and halloumi. Sprinkle sesame seeds on lettuce hearts.
