Fried Halloumi with Grilled Lettuce Hearts

Ingredients
200g Halloumi, sliced into 1cm pieces
1 cos lettuce heart, halved length ways
Olive oil to fry and drizzle
Walnut oil to drizzle
Squeeze of lemon
Sprinkle of sesame seeds
Method
- In small fry pan, cover bottom with olive oil and heat to medium heat. At the same time, spray olive oil on grilled pan and heat to medium heat.
- Put halloumi pieces in hot oil and leave for 3 mins. Place lettuce hearts cut side down on grill pan.
- After 3 mins, flip halloumi pieces and grill for another two mins. Watch lettuce hearts until they start to collapse and remove from grill, placing them cut side up on plate.
- Remove halloumi from fry pan and place on plate next to lettuce hearts
- Drizzle lettuce hearts with walnut oil. Halloumi with olive oil.
- Sprinkle salt on lettuce hearts, squeeze lemon juice on lettuce and halloumi. Sprinkle sesame seeds on lettuce hearts.
