Quinoa Savoury Pancakes

Ingredients

  • 3/4 cup cooked quinoa
  • 1/4 tspn baking powder
  • 1 Tbsp flour
  • 1 very small onion
  • pinch of salt
  • 1/2 cup milk (or additional egg)
  • 1 medium large egg
  • pinch of cumin
  • 3 leaves of lettuce shredded

Method

  1. Add quinoa, onion, milk, salt and cumin to Vitamix and blend on high until smooth
  2. Add egg and lettuce and mix on low speed (3-4) to combine
  3. In a medium high fry pan, heat a little oil
  4. Pour batter from jug starting in the centre and spiralling out to desired size. Wait for bubbles to form and edges to crisp then flip and cook for another minute or two.
  5. Place pancakes on plate and add knobs of butter to each 2nd or 3rd one.

Suggestions

  1. Add carrot with lettuce.
