Sweet chicken and bacon wraps

Sweet Chicken Bacon WrapsMakes 12-15 wraps

Ingredients

  • 4 boneless, skinless, chicken breasts
  • 1 (1-pound) package sliced bacon
  • 2/3 cup firmly packed brown sugar
  • 2 tablespoons chili powder

Directions

Preheat oven to 350 degrees F.Cut chicken breasts into 1-inch cubes. Cut each bacon slice into thirds. Wrap each chicken cube with bacon and secure with a wooden pick. Stir together brown sugar and chili powder. Dredge wrapped chicken in mixture. Coat a rack and broiler pan with nonstick cooking spray. Place chicken wrap on rack in broiler pan. Bake 350 for 30 to 35 minutes or until bacon is crisp.

Pumpking Chili

INGREDIENTS
1 yellow onion
1 carrot
1 bell pepper
1 jalapeno
2-3 cloves of garlic
1 teaspoon olive oil
1 tablespoon soy sauce or tamari
2 1/2 tablespoon mild chili powder
1 teaspoon dried oregano
1 teaspoon ground cumin
1 14.5 ounce can of diced tomatoes
1 ½ cups of pureed pumpkin*
2 cups of vegetable broth or water
3 cups of cooked beans**
1 tablespoon lime juice

DIRECTIONS

  • Chop up the onion, carrot, and bell pepper into chunks no bigger than a bean. Mince up the jalapeno and garlic.
  • In a big stock pot, heat the oil over a medium heat. Add the veggies and sauté em till they begin to brown, about 5 minutes. Add the garlic, jalapeno, soy sauce, and spices and cook that all together for another 30 seconds. Add the tomatoes, pumpkin, broth, and beans and stir that up to everything is mixed. Get those flavors mingling and whatnot. Turn down the heat, cover, and let that simmer together for about 15 minutes. Stir it around every now and then.
  • When it's done simmering, turn off the heat, and stir in the lime juice. Serve right away with your favorite toppings.

Ingredients

dry mixture
250g flour
36g granulated sugar
5g baking powder
5g baking soda
pinch of salt

wet mixture
2 tablespoons butter, melted
4 each eggs, yolks and white separated
470 ml buttermilk (buttermilk = 490 milk + 2 tblsp lemon juice)
12g granulated sugar

Directions

  1. Sift flour and add all try ingredients;

  2. Melt the butter over medium low heat. Do not burn the butter. Set aside to cool in the pan.

  3. Eggs: separate the yolks and the whites (save both.) Whisk the egg whites until fluffy (like a whiskey sour consistency). Add the buttermilk to the egg whites.

  4. In a separate bowl, stir the yolks until blended. Add the sugar. Stir to incorporate. Add the cooled, melted butter slowly into the egg yolk mixture. Slowly whisk the yolk mixture into the egg white mixture until fully incorporated.

  5. Slowly whisk the flour mixture into the wet mixture so that no clumps form. Whisk through to fluffy consistency and refrigerate for ten minutes.

  6. In a large skillet, generously spray non-stick spray into pan over medium-high heat. With a large spoon, spoon a cookie-sized portion of batter into the pan. Don't press on them or fuck with them at all. Let them sit there and chill out and think about your special person. When you see bubbles forming in the middle and a nice browning on the sides, it's time to flip them (only do this once).

Bolognese 2019-06

Ingredients
  • cooking olive oil
  • 2l/2k sieved tomato
  • 1 tube concentrated tomato
  • 1/2 kg minced beef
  • 5 garlic cloves
  • 1 large onion
  • 2-3 carrots
  • 250g dry minced soy
  • water
  • 750ml beef stock
Preparation
  1. Chop nicely onions, garlic, carrots
  2. Add soy sauce and Worcester to minced meat
  3. Add beef stock to dry minced soy and mix well
  4. Add oil to a pot for the soy
Cooking
  1. Olive oil and butter into pot
  2. Chopped onions and garlic into pot
  3. Add chopped carrots
  4. When nice and glazed, add minced beef
  5. Mix until cooked
  6. Add soy
  7. Mix for a minute or two
  8. Add tomato passata and tomato concentrate
  9. Add water
  10. Boil for 2h
